Chicken with Rosemary & Capers

Ingredients

4 garlic cloves - crushed, 2 Tbsp capers - drained & finely chopped, 4 anchovies - finely chopped, 1 Tbsp rosemary - finely chopped, 2 Tbsp olive oil, 8 chicken thigh fillets,

Combine garlic, capers, anchovies, rosemary & oil in a bowl. Cut a few deep slits into each thigh. Add thighs to garlic mixture. Rub mixture into chicken.

Heat a large pan over med-high heat. Fry chicken til browned and cooked through.

Serves 4

Basque Chicken

Ingredients

1 whole chicken - cut into portions, 8-10 Roma tomatoes, 2 green capsicum, 1 red capsicum, 1 bouquet garni, 1 Tbsp tarragon, 10 tiny onions, olive oil

Chop tiny onions into round slices. Pour a little oil in pan and brown onions.

Remove the pith and seeds from the capsicums and add to the onions, sauteing for a few minutes.

Add the tomatoes which have been cubed and cook for a few minutes more. Then remove from heat.

In a large deep pot, brown the chicken pcs in a little oil. Add the tomato mixture, bouquet garni & tarragon. Simmer approx. 45 min.

Serves 6

Coriander Chicken Patties

Ingredients

500 gm minced chicken or turkey, 1 1/2 tsp grd coriander, 1 1/2 tsp grd sea salt, 1 1/2 tsp brown sugar, 3/4 tsp grd black pepper, 1/4 tsp cayenne pepper

In a bowl, thoroughly mix together all the above ingredients.Cover bowl & refrigerate over night..

Next day heat some oil in fry pan on medium heat. Form thin patties from the mince. Fry til browned & serve with a salad or veggies. Or make small balls with the palms of your hands, fry til brown & serve with toothpicks as appetisers.

Chinese Meatballs

Ingredients

500 gm turkey or chicken mince, 1/4 C oatmeal, 2 Tbsp chopped onion, 1/4 tsp ground ginger, 1/2 C soy sauce, 1/2 C dry white wine, 1 1/4 C water, 1 tsp crushed garlic, 3 Tbsp honey, 1/2 tsp ground fennel, 1/2 tsp 5 spice

Mix mince, oatmeal, onion & ginger. Form into small balls & place in a shallow dish.

Mix the remaining ingredients in a pan & bring to a slow boil.Cool & pour over meatballs. Marinate 3 hrs, turning meatballs occasionally. Drain marinade & save.

Brown meatballs, then pour marinade over them & bring to the boil. Then simmer 20 min.

Serve with rice.

Polynesian Chicken


The chicken in this dish can be substituted with veal or pork.

500 gm chicken - diced, 2-3 Tbsp corn flour, 1 heaped tsp Polynesian Spice Blend, 1 tsp lemon skin - grated, 1/2 tsp white pepper - Place ingred in a bowl and mix well with hands or two forks.

Pour 3 tbsp oil in fry pan. Add above ingred to pan and fry til very nicely browned & thoroughly cooked.

In a saucepan mix the following ingred : 50 gm brown sugar, 200 ml orange juice, 100 ml pineapple juice, 1 Tbsp soya sauce, 1 Tbsp corn flour. Heat gently til well blended & thickened. Add 400 gm pineapple pcs & 1 banana - sliced. Heat & stir gently.

Pour this mixture over browned chicken. Nice with rice. Fresh coriander is nice sprinkled over final dish, or parsley if you don't like coriander.

Tip: Always use real corn flour (maize) when called for instead of (wheaten) corn flour. There is a major difference & you'll really notice the difference when cooking with it.
