Cardamom - Ground


Cardamom - Elettaria cardamomum - is a highly perfumed spice. Especially important in Indian cuisines. Store in jar, in frig or freezer.

Uses: Cardamom has both savory and sweet applications, but add sparingly. It is a key ingredient in the Indian spice blend called garam masala. In Arab countries, it is also used to flavour coffee, tea, and pastries. A touch of cardamom is great in carrot dishes, danish pastries, cakes, biscuits and fruit dishes. Curries, rice, milk puddings, custards and puddings. It is also a digestive aid and breath freshener

Cardamom Peas


450 gm frozen peas, 1/2 tsp dried oregano, 1/2 tsp ground cardamom, 1 Tbsp dried parsley, salt & pepper to taste.

Place peas in a medium sized pan, cover with lightly salted water, bring to the boil, then simmer for 3-5 min. Add pepper, oregano, cardamom & parsley. Mix well & serve hot.
