Harissa - Tunisian - Spice Girls Blend


Ingredients: Cumin, coriander, spearmint, garlic, chilli, paprika, caraway seed & a pinch of organic sea salt.

Uses in Cooking: Harissa features significantly in North African cuisine. It has an unforgettably intense, slow burn that will spice up any dish The chilli blend is used as a condiment, being mixed with olive oil, lemon juice or water to form a paste. Add as much water as spice blend and then just enough oil to form a paste to your own desired consistency. This paste can then be served in a small bowl as an accompaniment to meals. Add to soups, stews, curries, eggs, couscous & pastas.It can also be used as a meat rub.

Harissa Chicken


2 tsp harissa, 1 lemon - juiced, chopped coriander, 4 skinless chicken thigh fillets, 1 C cous cous, chopped mint, 200 gm tin of butter beans - rinsed & drained.

Mix harissa with half the lemon juice, 1 Tbsp coriander & some salt. Rub all over chicken. Flatten them out on a baking sheet & grill5 min each side til cooked.

While the chicken is cooking, place couscous in a bowl, add a cupful of boiling water, cover & leave for 5 min. Then fluff up with fork, add salt & pepper, rest of lemon juice, coriander, mint & the butter beans.

Serve together.
